Iron Boost: Beef, Bell Pepper & Papaya

Bicycle babes use A LOT of energy, not because we work up a sweat, just because our legs are always in motion which means always having lots of oxygen-carrying iron in our bloodstream is essential.

However, getting enough iron can be tricky if you don’t pair it with the right vegetables, iron is only absored when Vitamin C is available.

This Thai-style beef salad is an iron and vitamin C bonanza, eat it mid week to boost your energy.

Ingredients:
25g or less of grass-feed organic beef, thinly siced.
4 stems of broccolini chopped.
4 small red bell peppers.
10 cubes of fresh papaya.
1/2 red cabbage finely sliced.
Tablespoon of coconut oil.
3 cloves of fresh garlic.
Handful of Vietnamese basil finely chopped.

Dressing:
Juice of 1/2 a lime.
1 flat tablespoon of honey.
Salt & pepper to taste.

How to Make:
Melt coconut oil in pan and bring pan to high heat, place beef slices in pan and sear on both sides (about 3 mins total).
Turn off heat and Leave meat to rest.
Bring 2 cups of water to the boil, the turn off heat and drop chopped broccolini in to water. Leave in for 20 – 30 seconds or until bring green. Remove from water and drizzle with honey and toss in garlic.
Place diced papaya, and red cabbage in serving bowl and drizzle with lime.
Mix bell peppers, papaya, cabbage, broccolini, garlic together, place cooled beef, along with the coconut oil from the pan (don’t throw this out it’s full of goodness) on top of salad and sprinkle with basil, salt and paper. Enjoy!
